Description

Fun and nutritious lunchbox ideas combining wraps, pinwheels, and muffins for kids.

Ingredients

  • Tortillas
  • Bread
  • Deli meats
  • Cheese
  • Vegetables (lettuce, tomatoes, cucumbers)
  • Fruits (apples, bananas, grapes)
  • Nut butter (peanut or almond)
  • Granola
  • Yogurt
  • Muffin ingredients (flour, sugar, eggs)
  • Chicken
  • Spices and seasonings

Instructions

  1. Spread nut butter on the tortillas and layer on sliced fruits. Roll the tortillas tightly and slice them into bite-sized pieces.
  2. In a bowl, mix wet ingredients (like eggs) with dry ingredients (like flour and sugar). Pour the mixture into muffin tins and bake at 350°F for about 20 minutes until golden brown.
  3. Take either bread or tortillas and layer deli meats, cheese, and your choice of veggies. Roll them tightly and cut them into smaller portions.
  4. Include fresh fruits and yogurt for a balanced lunchbox. Grapes and apples are great choices!

Notes

Store leftovers in airtight containers in the refrigerator. Pinwheels and wraps are best eaten within 1-2 days. Muffins can last about a week if kept well.
