Delicious and healthy baked chicken meatballs with creamy ricotta and a rich spinach Alfredo sauce.
Ingredients

- 1 lb Ground chicken
- 1 cup Ricotta cheese
- 2 cups Spinach, chopped
- 1/2 cup Parmesan cheese, grated
- 1/2 cup Bread crumbs
- 1 Egg
- 2 cloves Garlic, minced
- 1/2 Onion, chopped
- 1 cup Alfredo sauce
- Salt, to taste
- Pepper, to taste
- Pasta, rice, or vegetables for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ground chicken, ricotta cheese, chopped spinach, Parmesan cheese, bread crumbs, egg, minced garlic, chopped onion, salt, and pepper until well combined.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 25-30 minutes, or until cooked through and golden brown.
- While meatballs are baking, prepare the spinach Alfredo sauce.
- Serve the meatballs over cooked pasta, rice, or vegetables, drizzling with spinach Alfredo sauce.
Notes
These meatballs can be frozen for up to 3 months. Serve with extra Parmesan cheese on top for added flavor.
