A flavorful and easy baked chicken dish seasoned with ranch spices, perfect for any weeknight meal.

- 4–6 bone-in, skin-on chicken thighs (about 2 pounds / 900g)
- 2 tablespoons olive oil or melted butter
- 1 packet or equivalent homemade ranch seasoning mix (dried parsley, garlic powder, onion powder, dill, salt, pepper)
- 1 teaspoon garlic powder
- 1 teaspoon smoked or sweet paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: chopped fresh parsley or chives for garnish
- Optional: squeeze of fresh lemon juice
Instructions
- Preheat your oven to 425°F (220°C). If you have a wire rack, place it over a rimmed baking sheet.
- Pat the chicken thighs dry with paper towels to achieve a crispy skin.
- Combine olive oil (or melted butter), ranch seasoning, garlic powder, paprika, salt, and pepper to form a seasoning paste in a mixing bowl.
- Toss the chicken thighs in the seasoning mixture, coating them evenly and getting some seasoning under the skin.
- Arrange the chicken thighs skin-side up on the wire rack or directly onto the baking sheet, spacing them apart.
- Bake for 35-40 minutes, checking around 20 minutes for browning. Broil for an extra crispy finish for 2-3 minutes if needed.
- Use a meat thermometer to check that the internal temperature reaches at least 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes to allow juices to redistribute.
- Garnish with fresh herbs if desired and serve hot.
Notes
Dry the chicken before seasoning for best results. Can easily double the recipe for larger groups.
