- 4 chicken breasts
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
- Optional: pasta, rice, or roasted vegetables for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Mix ricotta cheese, spinach, mozzarella cheese, Parmesan cheese, garlic, salt, and pepper in a bowl.
- Slice a pocket into each chicken breast and fill with the spinach ricotta mixture.
- Drizzle olive oil on top of the chicken and season with salt and pepper.
- Place the chicken in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Serve with pasta, rice, or roasted vegetables.
