Description

A delightful dessert that balances the tartness of rhubarb with the sweetness of golden syrup, perfect for any occasion.


Ingredients

  • 2 cups Rhubarb (Fresh, chopped into bite-sized pieces)
  • 1 cup Granulated Sugar (Adjust to taste)
  • 1/4 cup Melted Butter
  • 1 cup Self-Raising Flour (Can be swapped with gluten-free flour)
  • 1/4 cup Milk
  • 1 large Egg
  • 1/2 cup Golden Syrup
  • 3/4 cup Sugar
  • 1 cup Water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the chopped rhubarb with 1 cup of granulated sugar. Let it sit for about 10 minutes.
  3. In another bowl, combine melted butter, self-raising flour, milk, and the egg. Mix until smooth.
  4. Pour the batter into a greased baking dish.
  5. Next, layer the rhubarb mixture on top of the batter evenly.
  6. In a small pot, combine golden syrup, 3/4 cup sugar, and 1 cup of water. Bring to a boil, stirring until the sugar dissolves.
  7. Carefully pour the hot syrup mixture over the rhubarb and batter in the baking dish.
  8. Bake in the preheated oven for 40-45 minutes, or until golden brown and set.
  9. Allow to cool for a few minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for added flavor.
