- 2 cups Rhubarb (Fresh, chopped into bite-sized pieces)
- 1 cup Granulated Sugar (Adjust to taste)
- 1/4 cup Melted Butter
- 1 cup Self-Raising Flour (Can be swapped with gluten-free flour)
- 1/4 cup Milk
- 1 large Egg
- 1/2 cup Golden Syrup
- 3/4 cup Sugar
- 1 cup Water
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the chopped rhubarb with 1 cup of granulated sugar. Let it sit for about 10 minutes.
- In another bowl, combine melted butter, self-raising flour, milk, and the egg. Mix until smooth.
- Pour the batter into a greased baking dish.
- Next, layer the rhubarb mixture on top of the batter evenly.
- In a small pot, combine golden syrup, 3/4 cup sugar, and 1 cup of water. Bring to a boil, stirring until the sugar dissolves.
- Carefully pour the hot syrup mixture over the rhubarb and batter in the baking dish.
- Bake in the preheated oven for 40-45 minutes, or until golden brown and set.
- Allow to cool for a few minutes before serving.
Notes
Serve warm with vanilla ice cream or whipped cream for added flavor.
