- 2 pieces Boneless Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/2 cup Balsamic Vinegar
- 2 tablespoons Honey
- 3 cloves Garlic (Minced)
- 2 cups Bell Peppers (Mixed colors)
- 1 cup Zucchini (Sliced)
- 1 medium Red Onion (Sliced)
- 1/4 cup Parsley (Freshly chopped, for garnish)
Instructions
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side until browned and cooked through. Remove the chicken and set it aside.
- In the same skillet, add minced garlic, bell peppers, zucchini, and red onion. Sauté for about 5-6 minutes until the vegetables are tender.
- While the vegetables cook, mix balsamic vinegar and honey in a small bowl.
- Return the chicken to the skillet and pour the balsamic mixture over the chicken and veggies. Cook for another 2-3 minutes, allowing the glaze to thicken and coat everything well.
- Remove from heat and sprinkle with freshly chopped parsley before serving.
Notes
For extra flavor, marinate the chicken in balsamic vinegar, olive oil, and herbs for a few hours before cooking. Feel free to add other vegetables for variety.
