Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a mixing bowl until smooth.
- Stir in the mayonnaise and the egg until well combined.
- Mix together the flour, sugar, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
- Fold in the nuts if using.
- Pour the batter into a greased 9×5-inch loaf pan.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring to a wire rack.
