- 1 cup rice (white or brown)
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce (adjust to taste)
- 1 cup broccoli florets
- 1/2 cup carrots, shredded
- 2 green onions, chopped
- Salt and pepper to taste
- Oil for cooking
Instructions
- Cook the rice according to package instructions.
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
- In a skillet, heat oil over medium heat and add the diced chicken. Season with salt and pepper. Cook until the chicken is golden and cooked through.
- Add broccoli and carrots to the skillet and stir-fry for a few minutes until they are tender but still crisp.
- Remove from heat and mix the chicken and vegetables with the Bang Bang sauce.
- Serve the chicken and vegetables over the cooked rice.
- Garnish with chopped green onions and enjoy!
Notes
Use cooked rotisserie chicken for a quicker option. Feel free to add other vegetables like bell peppers or snap peas to customize.
