Description

A comforting beef casserole packed with spices, beans, and gooey cheese, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn kernels
  • 1 cup cooked rice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Chopped cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef with the chopped onion and minced garlic until cooked through.
  3. Mix in the diced tomatoes, black beans, corn, cooked rice, chili powder, cumin, salt, and pepper.
  4. Transfer the beef mixture to a greased casserole dish and top with shredded cheese.
  5. Bake for 20-25 minutes, until the cheese is melted and bubbly.
  6. Garnish with chopped cilantro before serving.

Notes

Feel free to add other vegetables like bell peppers or zucchini for added nutrition. Leftovers can be stored in an airtight container for up to 3-4 days.
