- 2 cups frozen berries (any mixture of small berries)
- 1 Tablespoon lemon juice
- 2 Tablespoons coconut sugar
- 2 Tablespoons maple syrup
- A pinch sea salt
- 1 ½ Tablespoons tapioca starch (also known as tapioca flour)
- 1 ¾ cups rolled oats (gluten-free if needed)
- 1 ¼ cups almond flour (blanched)
- ½ teaspoon baking soda
- ⅛ teaspoon sea salt
- ½ cup maple syrup
- ⅓ cup coconut oil (solid at room temperature)
- ½ teaspoon pure vanilla extract
Instructions
- Preheat your oven to 375°F and line a 9×9 baking dish with parchment paper.
- Measure out your frozen berries. If you are using large strawberries, cut them into 4 pieces.
- Place a small saucepan on low-medium heat. Add the berries, lemon juice, coconut sugar, maple syrup, and sea salt.
- Warm the berries for 5-10 minutes until they have released a lot of liquid and become soupy. Take out 1-2 tablespoons of the liquid and mix it with the tapioca starch until smooth, then return it to the pot.
- Stir the mixture while heating for 1 minute. Then remove it from the heat and set aside.
- In a large mixing bowl, stir together rolled oats, almond flour, baking soda, and sea salt. Add maple syrup, vanilla extract, and coconut oil.
- Mix the ingredients with a fork and use your hands to finish combining until everything is well mixed.
- Reserve ½-¾ cup of the oatmeal mixture and transfer the rest to the baking dish, pressing it into an even layer on the bottom.
- Spread the berry mixture evenly over the oatmeal base.
- Sprinkle the reserved oatmeal mixture on top of the berry layer in large clumps or small, according to your preference.
- Bake in the oven for 20-25 minutes, until the edges are lightly golden.
- Allow the bars to cool completely before slicing them to maintain their shape.
Notes
These bars can be served warm or cold, and can be paired with yogurt or honey for extra sweetness.
