- 15 lb brisket
- 1 cup beer
- 1/4 cup apple cider vinegar
- 1/4 cup beef stock
- 5 tbsp butter (melted)
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tbsp paprika
- 2 tbsp chili powder
- 2 tbsp kosher salt
- 2 tbsp coarse ground black pepper
- 1 tbsp brown sugar
Instructions
- Preheat your Traeger grill to Smoke mode; establish the fire with the lid open.
- Set the grill temperature to 225°F.
- Combine all spices for the rub in a bowl and generously apply it to the brisket.
- Place the brisket fat side down on the grill; cook until it reaches an internal temperature of 160°F (about 3-4 hours).
- Combine beer, apple cider vinegar, beef stock, and melted butter for basting.
- Wrap the brisket in aluminum foil at 160°F; pour the baste around it before sealing.
- Return to the grill and cook until the internal temperature reaches 204°F (an additional 3-4 hours).
- Let it rest for 15 minutes before slicing against the grain.
Notes
Always let the brisket come to room temperature before cooking. Keep the grill lid closed as much as possible for consistent temperature.
