- 8 egg whites
- 1 cup spinach, chopped
- 1 cup tomatoes, diced
- 1 cup mushrooms, sliced
- 1 cup bell peppers, diced
- 1 cup onions, chopped
- 1/2 cup feta cheese, crumbled
- Optional: cooked turkey, diced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat a little olive oil over medium heat.
- Sauté the onions, bell peppers, and mushrooms until softened.
- Add the spinach and tomatoes, cooking until the spinach wilts.
- In a bowl, whisk together the egg whites, salt, and pepper.
- Pour the egg white mixture over the sautéed vegetables in the skillet.
- Sprinkle the feta cheese and turkey (if using) on top.
- Cook for a few minutes on the stovetop until the edges start to set, then transfer to the oven.
- Bake for 15-20 minutes or until the frittata is cooked through.
- Let it cool slightly, then slice and serve.
