Description

A delicious and healthy egg white frittata packed with protein and colorful vegetables, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 8 egg whites
  • 1 cup spinach, chopped
  • 1 cup tomatoes, diced
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, diced
  • 1 cup onions, chopped
  • 1/2 cup feta cheese, crumbled
  • Optional: cooked turkey, diced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat a little olive oil over medium heat.
  3. Sauté the onions, bell peppers, and mushrooms until softened.
  4. Add the spinach and tomatoes, cooking until the spinach wilts.
  5. In a bowl, whisk together the egg whites, salt, and pepper.
  6. Pour the egg white mixture over the sautéed vegetables in the skillet.
  7. Sprinkle the feta cheese and turkey (if using) on top.
  8. Cook for a few minutes on the stovetop until the edges start to set, then transfer to the oven.
  9. Bake for 15-20 minutes or until the frittata is cooked through.
  10. Let it cool slightly, then slice and serve.
