Description

A creamy, flavorful pasta dish combining a rich sauce with penne pasta, perfect for weeknights or special occasions.


Ingredients

  • 8 ounces uncooked penne pasta
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 small onion (chopped finely)
  • 1 clove garlic (minced)
  • 1/4 cup vodka
  • 1/4 cup tomato paste
  • 3/4 cup heavy cream
  • Salt & pepper (to taste)
  • Fresh basil (optional)
  • Freshly grated parmesan cheese (optional)

Instructions

  1. Boil salted water in a pot. Cook penne pasta according to package directions until al dente.
  2. In a skillet over medium heat, melt olive oil and butter. Sauté chopped onion for about 5 minutes until softened.
  3. Add minced garlic and cook for an additional 30 seconds until fragrant.
  4. Pour in vodka and let it bubble for about 30 seconds.
  5. Mix in tomato paste until smooth.
  6. Stir in heavy cream, reduce heat to medium-low, and warm the sauce through.
  7. Season with salt and pepper. Toss drained pasta with the sauce, adding hot pasta water if needed to thin it out.

Notes

Use high-quality vodka for the best flavor. Adjust the amount of heavy cream to reach your desired richness. You can add cooked chicken or shrimp for added protein.
