- 8 ounces uncooked penne pasta
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 small onion (chopped finely)
- 1 clove garlic (minced)
- 1/4 cup vodka
- 1/4 cup tomato paste
- 3/4 cup heavy cream
- Salt & pepper (to taste)
- Fresh basil (optional)
- Freshly grated parmesan cheese (optional)
Instructions
- Boil salted water in a pot. Cook penne pasta according to package directions until al dente.
- In a skillet over medium heat, melt olive oil and butter. Sauté chopped onion for about 5 minutes until softened.
- Add minced garlic and cook for an additional 30 seconds until fragrant.
- Pour in vodka and let it bubble for about 30 seconds.
- Mix in tomato paste until smooth.
- Stir in heavy cream, reduce heat to medium-low, and warm the sauce through.
- Season with salt and pepper. Toss drained pasta with the sauce, adding hot pasta water if needed to thin it out.
Notes
Use high-quality vodka for the best flavor. Adjust the amount of heavy cream to reach your desired richness. You can add cooked chicken or shrimp for added protein.
