A fun and tasty spin on the classic Big Mac burger, combining all its best flavors into a creamy pasta salad.
Ingredients

- 1 pound Ground Beef (or lean turkey)
- 12 ounces Rotini Pasta (or short pasta shapes like bowtie or penne)
- to taste Salt
- to taste Black Pepper
- 1 cup Mayonnaise (or Greek yogurt)
- 1/4 cup Ketchup (or barbecue sauce)
- 1 tablespoon Yellow Mustard (or Dijon mustard)
- 2 tablespoons Dill Pickle Juice (or vinegar)
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Smoked Paprika
- 1 cup Dill Pickles
- 1 cup Shredded Cheddar Cheese (or Colby or pepper jack)
- 1 cup Shredded Iceberg Lettuce (or spinach)
- 1 cup French Fried Onions (or croutons)
Instructions
- Boil a pot of salted water. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside to cool.
- Cook the ground beef in a large skillet over medium heat until browned, breaking it apart as it cooks. Season with salt and black pepper. Drain excess fat and let cool.
- Combine mayonnaise, ketchup, yellow mustard, dill pickle juice, onion powder, garlic powder, and smoked paprika in a large bowl. Stir until well mixed.
- Add the cooled pasta, cooked beef, dill pickles, shredded cheese, and shredded lettuce to the bowl. Toss everything together until well coated with the dressing.
- Cover the salad and refrigerate for at least 1 hour to allow the flavors to blend.
Notes
Serve chilled and garnish with additional cheese or French fried onions. Store leftovers in an airtight container for 3 to 5 days.
