- 3 ripe bananas, mashed
- 2 eggs
- 1 cup oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- Pinch of salt
- Cooking spray or oil for skillet
Instructions
- Combine the mashed bananas, eggs, oats, baking powder, cinnamon, vanilla extract, and salt in a bowl. Mix until well combined.
- Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or oil.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Serve warm, optionally with fresh fruit or a drizzle of honey.
Notes
Best served warm. You can add toppings like sliced fresh fruit, nuts, honey or maple syrup in moderation.
