- 1 head cauliflower, cut into florets
- 1 cup Buffalo sauce
- 4 large tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup ranch or blue cheese dressing (optional)
- Olive oil, to taste
- Salt and pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the cauliflower florets with olive oil, salt, and pepper in a large bowl until well-coated.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast the cauliflower for about 20 minutes or until golden and tender, stirring halfway through.
- Remove the cauliflower from the oven and toss it in the Buffalo sauce until fully coated.
- Serve by placing a generous amount of roasted buffalo cauliflower in the center of a tortilla. Add shredded lettuce and diced tomatoes on top. Drizzle with ranch or blue cheese dressing if desired.
- Roll up the tortilla tightly and enjoy!
