Description

A flavorful and satisfying meal featuring spicy roasted cauliflower wrapped in tortillas, perfect for a quick lunch or dinner.


Ingredients

  • 1 head cauliflower, cut into florets
  • 1 cup Buffalo sauce
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup ranch or blue cheese dressing (optional)
  • Olive oil, to taste
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, salt, and pepper in a large bowl until well-coated.
  3. Spread the cauliflower on a baking sheet in a single layer.
  4. Roast the cauliflower for about 20 minutes or until golden and tender, stirring halfway through.
  5. Remove the cauliflower from the oven and toss it in the Buffalo sauce until fully coated.
  6. Serve by placing a generous amount of roasted buffalo cauliflower in the center of a tortilla. Add shredded lettuce and diced tomatoes on top. Drizzle with ranch or blue cheese dressing if desired.
  7. Roll up the tortilla tightly and enjoy!

Notes

For extra crunch, consider adding sliced cucumbers or bell peppers. To make it a full meal, serve with a side of sweet potato fries or a fresh salad.
