Description

  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup green onions (thinly sliced)
  • Avocado (optional, sliced)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch or blue cheese dressing

Instructions

  1. Cut the chicken breasts into bite-sized pieces to ensure even cooking.
  2. Mix the hot sauce and melted butter in a bowl until smooth.
  3. Heat olive oil in a skillet over medium heat until shimmering.
  4. Add the chicken pieces to the skillet, season with salt and black pepper. Cook for about 5-7 minutes until golden and fully cooked.
  5. Pour the hot sauce mixture over the cooked chicken and stir gently to coat.
  6. Create a base with the cooked rice in a bowl.
  7. Place the buffalo chicken on top of the rice, followed by shredded lettuce, halved cherry tomatoes, and sliced green onions.
  8. Add sliced avocado and shredded cheddar cheese if desired, then drizzle with ranch or blue cheese dressing before serving.
