Description

Deliciously chewy bars that combine sweet butterscotch and crunchy toffee, perfect for any occasion.


Ingredients

  • 1 cup melted butter (or coconut oil for a dairy-free option)
  • 1 cup brown sugar (light brown sugar for less sweetness)
  • 2 large eggs
  • 1 teaspoon vanilla extract (preferably pure)
  • 2 cups all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon baking soda
  • 1 teaspoon salt (sea salt recommended)
  • 1 cup butterscotch chips (or chocolate chips)
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. Combine the melted butter and brown sugar in a large mixing bowl. Stir until well mixed.
  3. Add the eggs and vanilla extract to the butter-sugar mixture and mix until smooth.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  5. Fold in the butterscotch chips and toffee bits until evenly distributed.
  6. Spread the cookie dough evenly into the prepared baking pan.
  7. Bake in the preheated oven for about 20-25 minutes or until the edges are golden brown and the center is slightly soft.
  8. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

For added flavor, sprinkle sea salt on top before serving.
