- 1 cup melted butter (or coconut oil for a dairy-free option)
- 1 cup brown sugar (light brown sugar for less sweetness)
- 2 large eggs
- 1 teaspoon vanilla extract (preferably pure)
- 2 cups all-purpose flour (or gluten-free flour blend)
- 1 teaspoon baking soda
- 1 teaspoon salt (sea salt recommended)
- 1 cup butterscotch chips (or chocolate chips)
- 1 cup toffee bits
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
- Combine the melted butter and brown sugar in a large mixing bowl. Stir until well mixed.
- Add the eggs and vanilla extract to the butter-sugar mixture and mix until smooth.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet mixture, stirring until just combined.
- Fold in the butterscotch chips and toffee bits until evenly distributed.
- Spread the cookie dough evenly into the prepared baking pan.
- Bake in the preheated oven for about 20-25 minutes or until the edges are golden brown and the center is slightly soft.
- Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
Notes
For added flavor, sprinkle sea salt on top before serving.
