- 1 tablespoon vegetable oil
- 1 ring (13.5 ounces) andouille sausage, sliced
- 1 large onion, diced
- ½ cup diced celery
- ½ red bell pepper, diced
- 2 teaspoons minced garlic
- 4 cups chicken broth
- 4 large russet potatoes, peeled and cubed
- ½ cup heavy whipping cream
- 1 cup shredded mild cheddar cheese
- Cajun seasoning
- Salt
- Black pepper
- Paprika
- Cayenne pepper
Instructions
- Sauté the sliced andouille sausage in a large pot over medium heat until browned.
- Add the diced onion, celery, red bell pepper, and minced garlic. Cook until the vegetables are tender.
- Stir in Cajun seasoning, salt, black pepper, paprika, and cayenne pepper to add flavor.
- Pour in the chicken broth and add the cubed potatoes. Bring to a boil, then reduce heat to simmer until potatoes are tender.
- Mix in the heavy cream and shredded cheddar cheese until melted. Adjust seasonings if needed.
- Serve hot, garnished with chopped parsley for extra flavor.
Notes
For a thicker soup, you can mash some of the potatoes after they cook. Use homemade chicken broth for enhanced flavor.
