Description

A comforting, hearty Cajun Potato Soup with rich flavors and a bit of a kick, perfect for chilly days.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 ring (13.5 ounces) andouille sausage, sliced
  • 1 large onion, diced
  • ½ cup diced celery
  • ½ red bell pepper, diced
  • 2 teaspoons minced garlic
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy whipping cream
  • 1 cup shredded mild cheddar cheese
  • Cajun seasoning
  • Salt
  • Black pepper
  • Paprika
  • Cayenne pepper

Instructions

  1. Sauté the sliced andouille sausage in a large pot over medium heat until browned.
  2. Add the diced onion, celery, red bell pepper, and minced garlic. Cook until the vegetables are tender.
  3. Stir in Cajun seasoning, salt, black pepper, paprika, and cayenne pepper to add flavor.
  4. Pour in the chicken broth and add the cubed potatoes. Bring to a boil, then reduce heat to simmer until potatoes are tender.
  5. Mix in the heavy cream and shredded cheddar cheese until melted. Adjust seasonings if needed.
  6. Serve hot, garnished with chopped parsley for extra flavor.

Notes

For a thicker soup, you can mash some of the potatoes after they cook. Use homemade chicken broth for enhanced flavor.
