- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup heavy cream
- 1 bell pepper, chopped
- 1 jalapeño, minced
- 2 tablespoons Cajun seasoning
- 1 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
- Chopped green onions for garnish
Instructions
- Heat a couple of tablespoons of olive oil over medium heat in a large pot.
- Add in one diced onion and two minced cloves of garlic; cook until softened and fragrant.
- Toss in one pound of boneless, skinless chicken breasts, browning on both sides.
- Stir in one chopped bell pepper, one minced jalapeño, and two tablespoons of Cajun seasoning for 2-3 minutes.
- Pour in one cup of chicken broth and bring to a vigorous boil.
- Reduce heat and let it simmer for 15 minutes.
- Remove the chicken and shred it using two forks, then return it to the pot.
- Stir in one can of drained and rinsed white beans and one cup of heavy cream, simmering for another 10 minutes.
- Season with salt and pepper to taste before serving.
- Ladle into bowls and garnish with chopped green onions.
Notes
Feel free to adjust the spice level with the jalapeño and Cajun seasoning to fit your taste.
