Description

A cozy and hearty Cajun White Chicken Chili that blends rich flavors and creamy textures for a comforting meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 bell pepper, chopped
  • 1 jalapeño, minced
  • 2 tablespoons Cajun seasoning
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped green onions for garnish

Instructions

  1. Heat a couple of tablespoons of olive oil over medium heat in a large pot.
  2. Add in one diced onion and two minced cloves of garlic; cook until softened and fragrant.
  3. Toss in one pound of boneless, skinless chicken breasts, browning on both sides.
  4. Stir in one chopped bell pepper, one minced jalapeño, and two tablespoons of Cajun seasoning for 2-3 minutes.
  5. Pour in one cup of chicken broth and bring to a vigorous boil.
  6. Reduce heat and let it simmer for 15 minutes.
  7. Remove the chicken and shred it using two forks, then return it to the pot.
  8. Stir in one can of drained and rinsed white beans and one cup of heavy cream, simmering for another 10 minutes.
  9. Season with salt and pepper to taste before serving.
  10. Ladle into bowls and garnish with chopped green onions.

Notes

Feel free to adjust the spice level with the jalapeño and Cajun seasoning to fit your taste.
