- 1/2 cup unsalted butter (melted)
- 16 oz cream cheese (softened)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 cup Reese’s Peanut Butter Cups (chopped)
- 1 cup granulated sugar (for caramel)
- 1/4 cup unsalted butter (for caramel)
- 1/2 cup heavy cream (for caramel)
- 1 teaspoon vanilla extract (for caramel)
- Optional: Whipped cream
- Optional: Additional chopped Reese’s Peanut Butter Cups
- Optional: Drizzle of caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the crushed Oreo cookies and melted butter in a mixing bowl until well mixed.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes. Let it cool.
- Beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add granulated sugar and vanilla extract, mixing until combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until fully incorporated.
- Gently fold in the chopped Reese’s Peanut Butter Cups.
- Pour the cheesecake filling over the cooled Oreo crust, smoothing the top with a spatula.
- Bake in the preheated oven for 50 minutes, or until the center is set but slightly jiggly.
- Melt the sugar in a saucepan over medium heat until it turns amber, stirring constantly.
- Remove from heat and carefully add the butter and heavy cream. Stir until smooth.
- Add the vanilla extract and let it cool slightly.
- Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.
- Refrigerate for at least 4 hours or overnight.
- Before serving, drizzle the cooled caramel sauce over the cheesecake and top with whipped cream and extra Reese’s if desired.

Make sure your cream cheese is softened to room temperature for a smooth filling. Be careful not to overmix the cheesecake filling, as this can lead to cracks. Allow the cheesecake to cool gradually in the oven to minimize the chances of cracking.
