Description

Ingredients

  • 1 lb chicken thighs, diced
  • 1 cup rice
  • 1 can coconut milk
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil over medium heat in a large pan. Add the diced chicken and sauté until browned.
  2. Add the chopped onion, garlic, and bell pepper to the pan and cook until the vegetables are softened.
  3. Stir in the curry powder and paprika, and season with salt and pepper.
  4. Add the rice, coconut milk, and chicken broth. Bring to a boil, then reduce heat and cover.
  5. Simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
  6. Fluff the rice with a fork, and garnish with fresh cilantro before serving.

Notes

For extra flavor, marinate the chicken in spices and lime juice beforehand. Add vegetables like peas or corn for nutrition and color. For a spicier kick, include jalapeños or hot sauce.
