- 1 lb chicken thighs, diced
- 1 cup rice
- 1 can coconut milk
- 1 bell pepper, diced
- 1 onion, chopped

- 1 tsp paprika

- 2 cups chicken broth
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil over medium heat in a large pan. Add the diced chicken and sauté until browned.
- Add the chopped onion, garlic, and bell pepper to the pan and cook until the vegetables are softened.
- Stir in the curry powder and paprika, and season with salt and pepper.
- Add the rice, coconut milk, and chicken broth. Bring to a boil, then reduce heat and cover.
- Simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
- Fluff the rice with a fork, and garnish with fresh cilantro before serving.
Notes
