- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1/2 cup chopped walnuts or pecans
- 1 cup cream cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and generously grease a loaf pan.
- Mix together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
- Combine the granulated sugar, brown sugar, and vegetable oil. Blend until smooth, then add the eggs one at a time.
- Add the grated carrots until well incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour half of the batter into the greased loaf pan. Mix the cream cheese, powdered sugar, and vanilla extract until smooth, and spread over the batter.
- Top with the remaining batter, sealing in the cream cheese layer.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10-15 minutes before transferring to a wire rack.
- Mix any remaining cream cheese with more powdered sugar and drizzle over the cooled loaf.
Notes
For a healthier version, substitute half the oil with unsweetened applesauce. Experiment with spices for additional flavor.
