Description

A moist and flavorful carrot cake loaf infused with warm spices and topped with a creamy glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts or pecans
  • 1 cup cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a loaf pan.
  2. Mix together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. Combine the granulated sugar, brown sugar, and vegetable oil. Blend until smooth, then add the eggs one at a time.
  4. Add the grated carrots until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour half of the batter into the greased loaf pan. Mix the cream cheese, powdered sugar, and vanilla extract until smooth, and spread over the batter.
  7. Top with the remaining batter, sealing in the cream cheese layer.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan for about 10-15 minutes before transferring to a wire rack.
  10. Mix any remaining cream cheese with more powdered sugar and drizzle over the cooled loaf.

Notes

For a healthier version, substitute half the oil with unsweetened applesauce. Experiment with spices for additional flavor.
