Description

A comforting dish that combines juicy meatloaf, creamy mashed potatoes, and melted cheese all in one pan. Perfect for weeknights or family meals.


Ingredients

  • 1 lb Ground Beef (80/20 lean-to-fat ratio recommended)
  • 1 cup Breadcrumbs (Gluten-free option available)
  • 1 Egg (Acts as a binder)
  • 1/2 cup Milk (Any variety or unsweetened plant milk)
  • 1 medium Onion (Finely chopped)
  • 1 tsp Garlic Powder (Can substitute with fresh minced garlic)
  • to taste Salt & Pepper (Adjust as needed)
  • 2 tbsp Worcestershire Sauce (Can substitute with soy sauce)
  • 1/2 cup Ketchup (Sugar-free option available)
  • 2 cups Mashed Potatoes (Homemade or store-bought)
  • 1 cup Cheddar Cheese (Shredded)
  • 1/2 cup Bacon (Cooked and crumbled)
  • 2 tbsp Green Onions/Chives (Optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix everything until well combined.
  2. Shape the mixture into a loaf and place it in a baking dish. Spread the remaining ketchup on top of the meatloaf.
  3. Bake in the preheated oven for about 45 minutes or until the meatloaf is cooked through.
  4. Prepare your mashed potatoes while the meatloaf is baking. If you’re using store-bought, heat them according to the package instructions.
  5. Remove the meatloaf from the oven and spread the mashed potatoes evenly on top. Sprinkle with cheddar cheese and crumbled bacon.
  6. Return to the oven and bake for an additional 15-20 minutes, or until the cheese is fully melted and bubbly.

Notes

Allow the casserole to cool for a few minutes before slicing. Pairs wonderfully with steamed vegetables or a simple salad.
