- 1 lb Ground Beef (80/20 lean-to-fat ratio recommended)
- 1 cup Breadcrumbs (Gluten-free option available)
- 1 Egg (Acts as a binder)
- 1/2 cup Milk (Any variety or unsweetened plant milk)
- 1 medium Onion (Finely chopped)
- 1 tsp Garlic Powder (Can substitute with fresh minced garlic)
- to taste Salt & Pepper (Adjust as needed)
- 2 tbsp Worcestershire Sauce (Can substitute with soy sauce)
- 1/2 cup Ketchup (Sugar-free option available)
- 2 cups Mashed Potatoes (Homemade or store-bought)
- 1 cup Cheddar Cheese (Shredded)
- 1/2 cup Bacon (Cooked and crumbled)
- 2 tbsp Green Onions/Chives (Optional garnish)
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup. Mix everything until well combined.
- Shape the mixture into a loaf and place it in a baking dish. Spread the remaining ketchup on top of the meatloaf.
- Bake in the preheated oven for about 45 minutes or until the meatloaf is cooked through.
- Prepare your mashed potatoes while the meatloaf is baking. If you’re using store-bought, heat them according to the package instructions.
- Remove the meatloaf from the oven and spread the mashed potatoes evenly on top. Sprinkle with cheddar cheese and crumbled bacon.
- Return to the oven and bake for an additional 15-20 minutes, or until the cheese is fully melted and bubbly.
Notes
Allow the casserole to cool for a few minutes before slicing. Pairs wonderfully with steamed vegetables or a simple salad.
