Description

A comforting casserole that blends tender chicken, nutritious broccoli, and a creamy sauce, perfect for family dinners or potlucks.

Ingredients

Scale
  • 2 cups cooked chicken (shredded or diced; rotisserie chicken works great)
  • 2 cups broccoli florets (fresh or frozen; if using frozen, thaw and drain)
  • 1 cup cream of chicken soup (or homemade)
  • 1 cup sour cream (for creaminess)
  • 1 cup shredded cheddar cheese (sharp cheddar for extra flavor)
  • 1/2 cup milk (or chicken broth for a lighter option)
  • 1 teaspoon garlic powder (for added depth)
  • 1 teaspoon onion powder (to enhance flavor)
  • 1/2 teaspoon black pepper (to taste)
  • 1/2 teaspoon salt (adjust as needed)
  • 1 cup breadcrumbs (for topping; panko adds extra crunch)
  • 2 tablespoons butter (melted, for mixing with breadcrumbs)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken and broccoli florets in a large mixing bowl.
  3. Whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Pour the creamy sauce over the chicken and broccoli mixture and stir gently until well coated.
  5. Grease a 9×13 inch baking dish and pour the chicken and broccoli mixture into it, spreading evenly.
  6. Mix the breadcrumbs with melted butter in a small bowl.
  7. Sprinkle the breadcrumb mixture evenly over the casserole.
  8. Bake for 30-40 minutes or until the top is golden brown and the casserole is bubbly.
  9. Let the casserole sit for 5-10 minutes before serving.

Notes

For extra flavor, add bacon or ham. Ensure broccoli is not overcooked. Spicy variations can include cayenne pepper or jalapeños.
