Ingredients

- 1 cup whole green lentils
- 1.5 cups chicken broth
- 1 cup water
- 2 cups brown or white rice, cooked
- 2 tbsp cilantro, chopped
- 2 tbsp lime juice
- 2 lbs chicken breast, cut into cubes
- 2 cloves garlic, minced
- 4 tbsp olive oil, divided
- 1.5 tsp chili powder
- 0.5 tsp cayenne pepper
- 1 tsp black pepper
- 0.5 tsp salt
- 1 red pepper, seeded and chopped
- 1 cubanelle pepper, seeded and chopped
- 0.5 sweet onion, chopped
- 1 can (14.75 oz) fire-roasted corn, drained
- 1 head romaine lettuce, chopped
- 1 tomato, diced
- optional toppings (salsa, shredded cheese, sour cream, or guacamole)
Instructions
- Rinse 1 cup of whole green lentils in cold water to remove any debris.
- Combine the lentils, 1.5 cups of chicken broth, and 1 cup of water in a saucepan. Bring to a boil and let simmer for 20-30 minutes until tender.
- Prepare 2 cups of brown or white rice according to package directions. Once cooked, toss with 2 tbsp lime juice and 2 tbsp chopped cilantro.
- Heat 2 tbsp of olive oil in a skillet over medium heat. Sauté the chopped red and cubanelle peppers for about 4 minutes, then add 0.5 chopped sweet onion and continue cooking for another 3 minutes.
- In another pan, heat 2 tbsp of olive oil. Add 2 lbs of cubed chicken breast, sprinkling with 1.5 tsp chili powder, 0.5 tsp cayenne, 0.5 tsp salt, and 1 tsp black pepper. Cook for 6 minutes until golden brown.
- Stir in 2 minced garlic cloves into the chicken and cook for an additional 2-3 minutes until the chicken is fully cooked.
- Layer the cooked rice, tender lentils, sautéed peppers, and savory chicken in large bowls. Top with chopped romaine lettuce, diced tomato, and your favorite toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For freezing, store in an airtight container for up to 3 months.
