- 8 oz. pasta (fettuccine or penne)
- 2 tablespoons olive oil
- 1 lb. boneless, skinless chicken breasts, sliced
- 1 cup mushrooms, sliced (preferably cremini or button)
- 2 cloves garlic, minced
- 1/2 cup Marsala wine
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for serving)
Instructions
- Cook the pasta: Begin by boiling a pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Cook the chicken: In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- Sauté the mushrooms: In the same skillet, add the sliced mushrooms. Sauté for about 3-4 minutes until they are browned and tender.
- Add garlic: Stir in the minced garlic and cook for another minute until fragrant.
- Deglaze with Marsala: Pour the Marsala wine into the skillet, scraping up any brown bits from the bottom. Let it simmer for about 2 minutes to reduce slightly.
- Add broth and cream: Stir in the chicken broth, heavy cream, and Italian seasoning. Allow the mixture to simmer for another 3-4 minutes, thickening just a bit.
- Return chicken and combine: Add the cooked chicken back into the skillet. If the sauce is too thick, stir in some reserved pasta water until you reach the desired consistency.
- Toss with pasta: Add the cooked pasta to the skillet and toss everything together to combine. Cook for an additional minute or two to heat through.
- Season: Taste and adjust the seasoning with more salt and pepper as needed.
- Serve: Remove from heat and garnish with chopped parsley and Parmesan cheese, if desired. Serve immediately.
