- 2 tablespoons olive oil
- 1 pound chicken breast, cut into pieces
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned.
- Add garlic and sauté for about 1 minute until fragrant.
- Pour in 4 cups of water, bring it to a boil, and add spaghetti. Cook according to package instructions until al dente.
- Stir in the spinach, cherry tomatoes, and Italian seasoning. Cook for another 2-3 minutes until the spinach wilts.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese.
