Description

A quick and flavorful burrito bowl featuring seasoned chicken, rice, beans, and customizable toppings.


Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp chili powder (optional)
  • 2 cups cooked white rice
  • 1 tbsp lemon juice
  • 1/4 cup chopped fresh cilantro
  • 1 can black beans
  • 1 cup roasted corn salsa
  • 1 cup fresh tomato salsa
  • 1 cup guacamole
  • Optional toppings (sour cream, shredded cheese, romaine lettuce, lime wedges)

Instructions

  1. Heat the olive oil in a pan over medium heat.
  2. Season the chicken with smoked paprika, garlic powder, onion powder, ground cumin, dried oregano, salt, black pepper, and chili powder. Mix well to coat the chicken evenly.
  3. Add the seasoned chicken to the hot pan and cook for about 6-7 minutes on each side or until fully cooked and golden brown. Remove chicken from the pan and let it rest for a few minutes before slicing.
  4. Prepare your rice according to the package instructions if it’s not already cooked.
  5. Combine the cooked rice, lemon juice, and chopped cilantro in a bowl. Mix well.
  6. Assemble your burrito bowl by placing the seasoned rice at the bottom, then add sliced chicken on top, followed by black beans, roasted corn salsa, fresh tomato salsa, and guacamole.
  7. Add any optional toppings you like, such as sour cream, shredded cheese, or romaine lettuce.
  8. Serve immediately and enjoy your delicious chipotle chicken burrito bowl!

Notes

Use pre-cooked chicken for faster prep. Store leftovers in airtight containers for up to 3 days.
