Description

A flavorful dish featuring glazed chicken thighs paired with creamy smoked gouda mashed potatoes.


Ingredients

  • 4 chicken thighs
  • 1/4 cup chipotle honey sauce
  • 2 cups potatoes
  • 1/2 cup smoked gouda cheese, shredded
  • 1/2 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Marinate the chicken thighs in the chipotle honey sauce for at least 30 minutes.
  3. Place the marinated chicken thighs on a baking sheet and bake for 25-30 minutes, or until fully cooked and caramelized.
  4. Peel and chop the potatoes. Boil them in salted water until tender, about 15 minutes.
  5. Drain the potatoes and return them to the pot. Add the smoked gouda, milk, and butter. Mash until creamy and season with salt and pepper.
  6. Serve the chicken thighs over the smoked gouda mashed potatoes.

Notes

For extra flavor, marinate the chicken thighs overnight. Use a meat thermometer to ensure chicken reaches 165°F (74°C).
