- 4 chicken thighs
- 1/4 cup chipotle honey sauce
- 2 cups potatoes
- 1/2 cup smoked gouda cheese, shredded
- 1/2 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Marinate the chicken thighs in the chipotle honey sauce for at least 30 minutes.
- Place the marinated chicken thighs on a baking sheet and bake for 25-30 minutes, or until fully cooked and caramelized.
- Peel and chop the potatoes. Boil them in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot. Add the smoked gouda, milk, and butter. Mash until creamy and season with salt and pepper.
- Serve the chicken thighs over the smoked gouda mashed potatoes.
Notes
For extra flavor, marinate the chicken thighs overnight. Use a meat thermometer to ensure chicken reaches 165°F (74°C).
