Deliciously decadent brownies combining rich chocolate flavor with a refreshing hint of mint.

- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon peppermint extract
- 1 cup chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Melt the butter in a large bowl and stir in the sugar until well combined.
- Add the eggs and vanilla extract, mixing until smooth.
- Whisk together the flour, cocoa powder, salt, and baking powder in another bowl.
- Slowly add the dry ingredients to the wet mixture, stirring until fully incorporated.
- Pour the brownie batter into the prepared pan and smooth the top.
- Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Prepare the mint frosting by mixing the powdered sugar, milk, and peppermint extract until smooth while the brownies are baking.
- Once the brownies are cool, spread the mint frosting evenly over the top.
- Heat the heavy cream until just simmering, then pour it over the chocolate chips in a bowl. Let it sit for a few minutes, then stir until smooth to make the ganache.
- Pour the ganache over the mint frosting and spread evenly.
- Chill in the refrigerator for at least an hour before cutting into squares and serving.
Notes
For a stronger mint flavor, add more peppermint extract. Ensure brownies are completely cool before frosting.
