- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides, then transfer them to a slow cooker.
- In the same slow cooker, add the onion, carrots, potatoes, garlic, tomato paste, thyme, bay leaf, salt, and pepper.
- Pour in the beef broth and give everything a gentle stir to combine all the ingredients well.
- Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
- Remove the bay leaf before serving. Ladle the comforting beef stew into bowls and enjoy!
Notes
For a thicker stew, mix a tablespoon of cornstarch in cold water and stir it into the simmering stew during the last 30 minutes of cooking.
