Description

A hearty and comforting beef stew, perfect for chilly evenings, filled with tender beef and vibrant vegetables.


Ingredients

Scale
  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef chunks on all sides, then transfer them to a slow cooker.
  2. In the same slow cooker, add the onion, carrots, potatoes, garlic, tomato paste, thyme, bay leaf, salt, and pepper.
  3. Pour in the beef broth and give everything a gentle stir to combine all the ingredients well.
  4. Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours until the beef is tender.
  5. Remove the bay leaf before serving. Ladle the comforting beef stew into bowls and enjoy!

Notes

For a thicker stew, mix a tablespoon of cornstarch in cold water and stir it into the simmering stew during the last 30 minutes of cooking.
