Description

A scrumptious banana bread enriched with coffee cake texture and flavor, perfect for cozy gatherings or a quiet afternoon.


Ingredients

  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 cup Butter (melted and cooled)
  • 3/4 cup Granulated Sugar
  • 1/4 cup Brown Sugar
  • 1 cup Sour Cream
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 3 medium Ripe Bananas (mashed)
  • 1/4 cup Brown Sugar (for filling)
  • 1 tablespoon Cinnamon
  • 1/2 cup Flour (for crumble topping)
  • 1/4 cup Sugar and Brown Sugar (for crumble topping)
  • 1/4 cup Cold Butter (for crumble topping)
  • 1 cup Powdered Sugar (for glaze)
  • 2 tablespoons Milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the flour, baking soda, and salt. Set aside.
  3. In another bowl, combine the melted butter, granulated sugar, brown sugar, sour cream, egg, and vanilla. Mix until smooth.
  4. Mash the ripe bananas and add them to the wet ingredients. Stir until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!
  6. For the cinnamon filling, mix the brown sugar and cinnamon in a small bowl.
  7. In a separate bowl, prepare the crumble topping by combining flour, brown sugar, and cold butter. Mix until crumbly.
  8. Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon filling on top. Add the remaining batter, and top with the rest of the filling and crumble topping.
  9. Bake for 60-70 minutes or until a toothpick comes out clean. Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Use overripe bananas for the best flavor and moisture. Avoid overmixing to keep the bread light and fluffy.
