Description

A hearty meatloaf that brings comfort to families, perfect for busy weeknights or special gatherings.


Ingredients

  • 1 ½ lbs lean ground beef
  • 1 cup diced onion
  • ¾ cup breadcrumbs
  • ¼ cup milk
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup (for topping)
  • 1 Tbsp white vinegar

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with aluminum foil.
  2. Combine ground beef, diced onion, breadcrumbs, milk, eggs, garlic powder, onion powder, salt, pepper, and tomato paste in a large mixing bowl.
  3. Mix until just combined and shape it into a loaf or place in a greased loaf pan.
  4. Bake uncovered for 40 minutes.
  5. Mix ketchup and white vinegar; spread over the meatloaf and bake for an additional 10 minutes.
  6. Let it rest for 10 minutes before slicing and serving.

Notes

For extra flavor, add chopped veggies like bell peppers. Substitute ground beef with turkey or chicken for a lighter option.
