- 1 ½ lbs lean ground beef
- 1 cup diced onion
- ¾ cup breadcrumbs
- ¼ cup milk
- 2 eggs
- 1 tsp tomato paste
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ¼ tsp ground black pepper
- ¾ cup ketchup (for topping)
- 1 Tbsp white vinegar
Instructions
- Preheat your oven to 350°F and line a baking sheet with aluminum foil.
- Combine ground beef, diced onion, breadcrumbs, milk, eggs, garlic powder, onion powder, salt, pepper, and tomato paste in a large mixing bowl.
- Mix until just combined and shape it into a loaf or place in a greased loaf pan.
- Bake uncovered for 40 minutes.
- Mix ketchup and white vinegar; spread over the meatloaf and bake for an additional 10 minutes.
- Let it rest for 10 minutes before slicing and serving.
Notes
For extra flavor, add chopped veggies like bell peppers. Substitute ground beef with turkey or chicken for a lighter option.
