Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups tomato juice (alcohol-free)
  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 12 jalapeños, diced (to taste)
  • Juice of 2 limes
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Combine the tomato juice, cucumber, avocado, red onion, cilantro, jalapeños, lime juice, salt, and pepper in a large bowl.
  2. Add the shrimp and stir gently to combine.
  3. Cover and refrigerate for at least 30 minutes to chill the mixture.
  4. Serve the shrimp cocktail in individual bowls with tortilla chips on the side.
