- 1 cup glutinous rice
- 2 cups coconut milk
- 1/2 cup sugar
- 1/2 teaspoon pandan extract
- 1/4 teaspoon salt
- 2 cups water
- Gelatin (optional for setting)
Instructions
- Soak the glutinous rice in water for at least 2 hours, then drain.
- Combine the rice with 2 cups of water in a saucepan and cook over medium heat until the rice is tender and the water is absorbed.
- Mix coconut milk, sugar, pandan extract, and salt in a separate saucepan. Heat the mixture until warm, but do not boil.
- If using gelatin, dissolve it in a small amount of warm coconut milk before adding it to the mixture.
- Combine the cooked rice with the coconut mixture and stir well.
- Pour the mixture into a mold and refrigerate until set, usually 2-3 hours.
- Slice the jelly dessert into pieces and serve chilled.
Notes
For best texture, soak the glutinous rice well. Adjust sweetness to your preference. Using gelatin will result in a firmer texture.
