Description

A delightful coconut pandan rice jelly dessert that brings tropical flavors to your table, perfect for hot days or gatherings.


Ingredients

Scale
  • 1 cup glutinous rice
  • 2 cups coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon pandan extract
  • 1/4 teaspoon salt
  • 2 cups water
  • Gelatin (optional for setting)

Instructions

  1. Soak the glutinous rice in water for at least 2 hours, then drain.
  2. Combine the rice with 2 cups of water in a saucepan and cook over medium heat until the rice is tender and the water is absorbed.
  3. Mix coconut milk, sugar, pandan extract, and salt in a separate saucepan. Heat the mixture until warm, but do not boil.
  4. If using gelatin, dissolve it in a small amount of warm coconut milk before adding it to the mixture.
  5. Combine the cooked rice with the coconut mixture and stir well.
  6. Pour the mixture into a mold and refrigerate until set, usually 2-3 hours.
  7. Slice the jelly dessert into pieces and serve chilled.

Notes

For best texture, soak the glutinous rice well. Adjust sweetness to your preference. Using gelatin will result in a firmer texture.
