Description

Ingredients

  • 8 oz Pasta (e.g., fusilli or penne)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Bell peppers, diced
  • 1 cup Cucumber, diced
  • 1/2 Red onion, finely chopped
  • 1/2 cup Olives, sliced
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Olive oil
  • 2 tbsp Red wine vinegar
  • Salt and pepper to taste
  • 1/4 cup Fresh herbs (e.g., basil or parsley)

Instructions

  1. Cook the pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, bell peppers, cucumber, red onion, and olives.
  3. Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  4. Pour the dressing over the pasta salad and toss until everything is well coated.
  5. Gently fold in crumbled feta cheese and chopped herbs.
  6. Serve immediately or refrigerate for later.

Notes
