Description

A hearty and satisfying slow cooker dish with ground beef, tender pasta, and a creamy sauce.


Ingredients

  • 1 lb ground beef (80/20)
  • 1/2 cup onion (finely diced)
  • 2 garlic cloves (minced)
  • 1 tbsp oil
  • 8 oz pasta (penne or rotini)
  • 4 cups beef broth
  • 1 1/4 cups heavy cream (room temperature)
  • 3/4 cup grated parmesan
  • 1 cup fresh spinach
  • 1 1/2 tbsp Italian seasoning
  • 1 1/4 tsp salt
  • 1 1/4 tsp garlic powder
  • 1 1/4 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon as it cooks, until it’s browned and most of the pink is gone, about 3-5 minutes.
  2. Add the diced onion and minced garlic, stirring constantly for another minute until fragrant.
  3. Carefully pour off any excess grease from the skillet, and transfer the beef mixture to your slow cooker.
  4. Add the beef broth, Italian seasoning, salt, garlic powder, onion powder, black pepper, and red pepper flakes. Stir well.
  5. Cover the slow cooker and cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  6. Switch the slow cooker to HIGH and stir in the uncooked pasta, followed by the room-temperature heavy cream.
  7. Cook uncovered for the final 45 minutes, stirring occasionally, until the pasta is tender and the sauce is creamy.
  8. Stir in the fresh spinach just before serving.

Notes

Use room-temperature heavy cream to avoid curdling. Customize with more vegetables or different meats as desired.
