- 8 oz spaghetti
- 3 boneless, skinless chicken breast halves
- 1.5 tbsp Cajun seasoning
- 4 tbsp butter
- 2 cups half-and-half
- 2 garlic cloves, minced
- 2 tbsp white onion, minced
- Salt and pepper to taste
- â…“ cup shredded Parmesan cheese (plus more for serving)
- 1 diced Roma tomato (for garnish)
- 1 tbsp chopped parsley (for garnish)
Instructions
- Season the chicken breasts with Cajun seasoning. Brown the chicken in a skillet with butter over medium heat for about 6 minutes total. Once cooked, remove them from the skillet and keep warm.
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In the same skillet, sauté the garlic and onion in the melted butter for one minute.
- Add the half-and-half and season with salt and pepper. Simmer this mixture for 3-4 minutes.
- Stir in the Parmesan cheese and mix until melted.
- Combine the cooked spaghetti with the sauce in the skillet, and then serve topped with sliced chicken, diced tomato, and parsley.
Notes
Adjust the spiciness by using more or less Cajun seasoning according to your taste. Use fresh ingredients for optimal results.
