Description

A refreshing and colorful corn salad packed with flavor and nutrients, perfect for barbecues, picnics, or as a healthy snack.


Ingredients

  • 3 cups fresh corn (or canned, drained)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fresh corn, cherry tomatoes, red onion, cucumber, bell pepper, and cilantro.
  2. In a separate small bowl, whisk together the mayonnaise and lime juice.
  3. Pour the dressing over the corn salad and toss gently to combine.
  4. Season with salt and pepper to taste.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
