Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Prepare the grated carrots and set them aside.
- Mix the cottage cheese, vegetable oil, eggs, and vanilla extract in a large bowl until well blended.
- Combine the flour, sugar, baking powder, baking soda, cinnamon, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold the grated carrots into the batter until evenly distributed.
- Add optional ingredients like chopped walnuts and raisins if desired.
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
- Cut into squares or rectangles for serving.
