Description

Ingredients

  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Prepare the grated carrots and set them aside.
  3. Mix the cottage cheese, vegetable oil, eggs, and vanilla extract in a large bowl until well blended.
  4. Combine the flour, sugar, baking powder, baking soda, cinnamon, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold the grated carrots into the batter until evenly distributed.
  7. Add optional ingredients like chopped walnuts and raisins if desired.
  8. Pour the batter into the prepared baking pan, spreading it evenly.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
  11. Cut into squares or rectangles for serving.
