- 1.25 cups oats (old-fashioned or quick)
- 0.25 cup maple syrup (pure)
- 1 large egg (room temperature)
- 1 teaspoon ground cinnamon (quality for best taste)
- 0.5 teaspoon vanilla extract (pure)
- 0.5 teaspoon baking powder (for leavening)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese in a blender until completely smooth.
- Combine the blended cottage cheese, maple syrup, egg, and vanilla extract in a mixing bowl until well mixed.
- Stir in the oats, cinnamon, baking powder, and salt until a thick, slightly sticky dough forms.
- Scoop portions of dough onto the prepared baking sheet, spacing them slightly apart.
- Flatten each mound gently with the back of a spoon to form cookie shapes.
- Bake for 12–15 minutes until the cookies are set and lightly golden on the bottom.
- Cool slightly on the baking sheet before serving; cookies will firm up as they cool.
Notes
These cookies are best served warm. Drizzle with extra maple syrup for a special touch.
