Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
- Combine cottage cheese, eggs, and shredded cheese in a bowl.
- Add diced vegetables and mix well.
- Season with salt and pepper.
- Pour the mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the bites are set and lightly golden.
- Allow to cool slightly before removing from the tin and serve warm.
