Description

Ingredients

  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers or spinach)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
  2. Combine cottage cheese, eggs, and shredded cheese in a bowl.
  3. Add diced vegetables and mix well.
  4. Season with salt and pepper.
  5. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until the bites are set and lightly golden.
