Description

A fun twist on traditional nachos, packed with protein from cottage cheese and customizable with your favorite toppings.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1 cup tortilla chips
  • 1/2 cup diced tomatoes
  • 1/4 cup diced bell peppers
  • 1/4 cup sliced olives
  • 1/4 cup corn
  • 1/4 cup diced red onion
  • 1/4 cup shredded cheese (optional)
  • 1/4 cup guacamole or avocado (optional)
  • Salsa and sour cream for topping (optional)
  • Salt and pepper to taste

Instructions

  1. In a bowl, layer the tortilla chips at the bottom.
  2. Add the cottage cheese evenly on top of the chips.
  3. Next, layer diced tomatoes, bell peppers, olives, corn, and red onion over the cottage cheese.
  4. If desired, sprinkle shredded cheese on top.
  5. Add guacamole or diced avocado if you like.
  6. Top with salsa and sour cream, and season with salt and pepper.
  7. Serve immediately and enjoy!
