A fun twist on traditional nachos, packed with protein from cottage cheese and customizable with your favorite toppings.
Ingredients

- 1 cup cottage cheese
- 1 cup tortilla chips
- 1/2 cup diced tomatoes
- 1/4 cup diced bell peppers
- 1/4 cup sliced olives
- 1/4 cup corn
- 1/4 cup diced red onion
- 1/4 cup shredded cheese (optional)
- 1/4 cup guacamole or avocado (optional)
- Salsa and sour cream for topping (optional)
- Salt and pepper to taste
Instructions
- In a bowl, layer the tortilla chips at the bottom.
- Add the cottage cheese evenly on top of the chips.
- Next, layer diced tomatoes, bell peppers, olives, corn, and red onion over the cottage cheese.
- If desired, sprinkle shredded cheese on top.
- Add guacamole or diced avocado if you like.
- Top with salsa and sour cream, and season with salt and pepper.
- Serve immediately and enjoy!
