Description

A healthy and delicious crustless quiche packed with cottage cheese and spinach, perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Olive oil or cooking spray for greasing the pan

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Whisk together the eggs and milk in a large bowl until well combined.
  3. Stir in the cottage cheese, chopped spinach, shredded cheese, salt, pepper, and garlic powder (if using).
  4. Grease a pie dish or quiche pan with olive oil or cooking spray.
  5. Pour the mixture into the prepared pan and spread it evenly.
  6. Bake in the preheated oven for 30-35 minutes or until the quiche is set and the top is golden.
  7. Let cool slightly before slicing and serving.

Store any leftover quiche in an airtight container in the refrigerator for up to 3 days, or freeze individual slices for up to 2 months.
