Description

A nutritious and flavorful meal of sweet potatoes, seasoned ground beef, creamy cottage cheese, and fresh avocados, perfect for family dinners or meal prep.


Ingredients

  • 3 large sweet potatoes, peeled and diced
  • Avocado oil spray
  • ¾ teaspoon salt, divided
  • ¾ teaspoon paprika
  • ¾ teaspoon garlic powder
  • 1½ pounds grass-fed ground beef
  • 1 teaspoon salt
  • 1½ teaspoons paprika
  • 1½ teaspoons chili powder
  • 1¼ teaspoons garlic powder
  • 1¼ teaspoons onion powder
  • 2 medium avocados, sliced or cubed
  • 24 ounces 2% cottage cheese
  • Crushed red pepper flakes, optional
  • Hot honey

Instructions

  1. Place the diced sweet potatoes into the air fryer basket. Mist lightly with avocado oil, sprinkle with ½ teaspoon of salt and the spices, then toss until evenly coated.
  2. Cook the sweet potatoes in the air fryer until tender and golden, shaking the basket halfway through.
  3. Heat a skillet over medium heat. Add the ground beef and cook while breaking it apart. Stir in all beef seasonings and continue cooking until fully browned.
  4. Divide the cooked sweet potatoes, seasoned beef, avocado, and cottage cheese evenly among serving bowls.
  5. Finish each bowl with crushed red pepper flakes and a drizzle of hot honey just before serving.

Notes

Let sweet potatoes marinate in spices for 30 minutes for extra flavor. Consider using Greek yogurt instead of cottage cheese for a different texture.
