A delightful dish combining buttery garlic, fresh lemon, chicken, and broccoli in a tasty pasta meal. Perfect for family dinners or weeknight meals.

- 8 oz bowtie pasta
- 2 cups broccoli florets
- 2 breasts chicken, cooked and diced
- 4 tbsp butter
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Start by boiling water in a large pot. Add a pinch of salt.
- Cook the bowtie pasta according to package instructions until al dente.
- In the last 2 minutes of cooking the pasta, add the broccoli florets.
- Drain the pasta and broccoli, then set aside.
- In the same pot, melt the butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the lemon juice and zest, mixing well.
- Add the cooked chicken (or shrimp/chickpeas) to the pot. Season with salt and pepper to taste.
- Toss everything together gently.
- Combine the cooked pasta and broccoli with the chicken and sauce in the pot.
- Give everything a good toss to coat the pasta and broccoli in the buttery sauce.
- Serve hot, with a sprinkle of Parmesan cheese on top if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop.
