Cowboy Butter Lemon Bowtie Chicken and Broccoli

Description

A delightful dish combining buttery garlic, fresh lemon, chicken, and broccoli in a tasty pasta meal. Perfect for family dinners or weeknight meals.


Ingredients

  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 2 breasts chicken, cooked and diced
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Start by boiling water in a large pot. Add a pinch of salt.
  2. Cook the bowtie pasta according to package instructions until al dente.
  3. In the last 2 minutes of cooking the pasta, add the broccoli florets.
  4. Drain the pasta and broccoli, then set aside.
  5. In the same pot, melt the butter over medium heat.
  6. Add the minced garlic and sauté for about 1 minute until fragrant.
  7. Stir in the lemon juice and zest, mixing well.
  8. Add the cooked chicken (or shrimp/chickpeas) to the pot. Season with salt and pepper to taste.
  9. Toss everything together gently.
  10. Combine the cooked pasta and broccoli with the chicken and sauce in the pot.
  11. Give everything a good toss to coat the pasta and broccoli in the buttery sauce.
  12. Serve hot, with a sprinkle of Parmesan cheese on top if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop.
