Instructions
- Preheat your oven to 350°F (175°C).
- Peel and slice 5 medium peaches into roughly ½-inch thick slices. Toss them in a bowl with 1 tablespoon fresh lemon juice, 1 teaspoon vanilla extract, ½ teaspoon cinnamon (optional), and a pinch of salt. Set aside to marinate.
- In a medium skillet over medium heat, melt 6 tablespoons unsalted butter. Stir frequently until the butter foams and turns golden brown with nutty aromas, about 4-5 minutes. Remove from heat immediately.
- Combine 1 cup old-fashioned rolled oats, ½ cup all-purpose flour, ⅓ cup packed brown sugar, 1 teaspoon ground cardamom, and a pinch of salt in a mixing bowl. Pour the warm brown butter and ¼ cup honey over the dry mixture and stir gently until oats are evenly coated and clumps form.
- Spread the peach mixture evenly in an 8×8 inch oven-safe baking dish. Sprinkle the oat crumble over the top, covering the peaches fully.
- Bake in the preheated oven for 35-40 minutes until the topping is golden brown and crisp and the peach filling bubbles around the edges.
- Let the crisp rest for 10-15 minutes before serving to allow juices to thicken and flavors to meld.
- Serve warm, ideally with vanilla ice cream or whipped cream.
Notes
Use ripe peaches for the best flavor. You can substitute cardamom with nutmeg or stick with cinnamon.
