Description

A healthy, hearty lentil soup that’s easy to prepare in a slow cooker, allowing flavors to blend beautifully for a nutritious meal.


Ingredients

  • 2 cups lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Combine lentils, onion, carrots, celery, and garlic in a slow cooker.
  2. Add vegetable broth, diced tomatoes, cumin, thyme, salt, and pepper.
  3. Drizzle with olive oil.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 360 minutes (6-8 hours) or high for 240 minutes (3-4 hours), until lentils are tender.
  6. Adjust seasoning as needed and serve warm.

Notes

Serve with fresh herbs, crusty bread, or a side salad. For added zing, consider a dollop of yogurt or a splash of lemon juice.
