- 4 chicken breasts
- 8 ounces brie cheese, cut into pieces
- 1 cup cranberry sauce
- Salt and pepper to taste
- Olive oil
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Carefully cut a pocket into each chicken breast.
- Stuff each pocket with pieces of brie cheese and a spoonful of cranberry sauce.
- Season the outside of the chicken with salt and pepper.
- Heat a skillet over medium-high heat and add olive oil.
- Sear each chicken breast for about 3-4 minutes on each side until golden brown.
- Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
- Garnish with fresh herbs if desired and serve warm.
Notes
Use a meat thermometer to ensure the chicken is fully cooked. Internal temperature should reach 165°F (75°C). Adjust the cranberry sauce to taste.
